For the long sandy beaches you long for Nat: Try Hios island or Crete. Those have the longest beaches. Especially Hios, you will love the sand there.

But as someone also mentioned Rhodes: There is a place on Rhodes island, it is called Prasonisi. This place is quite unique - you cannot stay there, only visit it by car I tink - but it is a sandy beach which combines the big island with a very small island. It is very windy (in the winter it is all covered by sea water) and on one side of this beach you can windsurf, on the other the water is completely calm, no wave at all. Simply magic to see. And the sand there is cold and it is like this for kilometers long
