Firstly it depends on why you want to restore a vehicle, is it a financial investment or a labour of love. You will very rarely get your money back on a restoration. Pick a vehicle that appeals to you, do some research on the price you can expect to pay/condition. check into the availability of parts and their prices. When you find what your looking for check it out very carefully, make sure it`s complete, body is solid/repairable, brightwork is good, interior trim is complete.
